4 tablespoons olive oil, for frying
3 cloves garlic, crushed and coarsely chopped
1 small onion, chopped
5 large tomatoes, diced thinly
Pinches of cayenne, paprika, cumin, black pepper & 1/2 tsp Himalayan salt
1. Heat oil in a saucepan over low-medium heat. Add onions and cook, stirring occasionally for 2 minutes. Add garlic, and cook, stir‐ ring frequently for a further 1 minute or so. Add to- matoes, salt & spices & let simmer on low-medium heat for 5-6 minutes allowing it to thicken.
2. Create some small indents in the sauce to crack the eggs in. Place a lid on the saucepan to poach the eggs for a further 3-5 minutes. Serve alongside a light easy salad.
