STAGE 1 KOMBUCHA

Ingredients
1-2 C Liquid Kombucha
A well-brewed herbal tea (must be brought back to room temperature – add cool water)
organic coconut, rapadura sugar or panella
Instructions
1: Brew a strong herbal tea of your choice (green tea, tulsi, chamomile etc etc) in about 3 C of water. Bring to boil and then let steep just below boiling point for 10 minutes.
Once steeped add a further 3-4 C of cool water to bring the temperature down.
2: Add 6 T of choice of sugar and stir in.
3: Pour this tea into your brewing vessel and ensure it is only warm, not hot. If it’s hot, wait a while.
4: Add in your liquid kombucha starter – use 1 cup per 1L of brew.
5: Cover with a breathable cloth, and place in a dark, warm place for 2 weeks! Your SCOBY will grow from the cellulose being produced by the bacteria & yeast – it should look nice and clean & healthy, but a few stringy boogers are okay!
You can drink your kombucha now & save the SCOBY for the next batch you want to make!
